A Papalo Recipe for “Soap Tasters”

If you’re curious about cooking with papalo, a simple avocado salsa is a perfect place to start. It showcases the herb’s fresh flavor while highlighting why it has become a favorite alternative for people who can’t stand cilantro.

Papalo Avocado Salsa

Ingredients

  • 2 ripe avocados, diced
  • 1 medium tomato, finely chopped
  • ¼ cup papalo leaves, finely chopped
  • Juice of 1 lime
  • 2 tablespoons finely diced red onion
  • 1 small jalapeño, minced (optional)
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste

Instructions

  1. Combine the avocado, tomato, onion, and jalapeño in a medium bowl.
  2. Add the chopped papalo and gently toss the ingredients together.
  3. Squeeze the lime juice over the mixture and season with salt and pepper.
  4. Stir carefully so the avocado keeps its shape.
  5. Let the salsa sit for about five minutes before serving.

Serve with tortilla chips, spoon it over grilled fish or chicken, or use it as a topping for tacos and burrito bowls. Because papalo has a stronger flavor than cilantro, start with a modest amount and add more if desired.
